In a review d technology of production of different kinds of tea and also the mechanisms of biological action of his the most active components — catechins are considered. An attempt to explain these mechanisms on the basis of antioxidant properties of these physiological active substances is undertaken, which are cause the presence of them antimutagen and antineoplastic effects. In detail chemical and biological properties of the most active from catechins — EGCG are considered.
