STABILITY OF Aspergillus niger GALACTOSIDASE
IN THERMAL ACTION

Thermal stability of Aspergillus niger a-galactosidase between 50 0С and 60 0С at optimum pH-activity using п-nitrophenyl-a-D-galactoside pyranoside as a substrate was studied. The kinetic parameters of dissociative thermal inactivation of enzyme were determined at 51 and 54 0С. Possibility of stabilization of protein molecule in presence of glucose, sucrose, trehalose, melibiose, raffinose and stahyose (5 g/l) and BSA (1%) is shown. Results of research could be used for stable enzyme preparation applied in biotechnological processes.
